What is SourdoughBread?
Sourdough bread is an ancient bread that has been made for thousands of years.
Whereas most breads are made with a cultivated yeast, the long fermentation of sourdough uses naturally occurring bacteria and yeasts – the result of this is its distinctive ‘sour’ taste, the result of the lactic acid that is produced by the bacteria used in fermenting the dough.
The initial preparation of Sourdough bread begins with a pre-ferment, or ‘Sourdough Starter’, which is made of flour and water. Depending on the bread that we intend to make, the starter can vary from more of a fluid, batter like substance, to a stiff dough, subject to the ratio of flour and water used. When flour comes into contact with water, a natural chemical reaction occurs, leading to the growth of yeast and bacteria. Some of this starter is used to make a loaf of Sourdough, the rest is stored and used for future baking.
Sourdough bread is perfect for sandwiches, burgers and as an accompaniment to pasta dishes and soups.
